Abstrak

Dates are one of the functional food, because of the contain nutrients such as sugar, carbohydrates, protein, and potassium.  There are a lot of benefits of dates, honey, ginger, and milk to the body, it is necessary to develop a product as a healthy and convenient alternative drink is kurmajasu juice. The aim of the study was to determine the nutritional value of kurmajasu juice. The study was an experiment with a completely randomized design (CRD) consisting of 4 treatments with different types of dates (ajwa, sukari, khalas, and tunisia) and 5 replicates. The parameters observed were carbohydrate, protein, potassium, glucose, sucrose, and fructose. The results showed that kurmajasu juice with different types of dates gave significant differences (p<0.05) on carbohydrate, protein, potassium, glucose, sucrose, and fructose. The averaged carbohydrate content was 68.37%, 68.40%, 68.42%, 68.47%. The protein test had an averaged of 2.59%, 2.67%, 2.74%, 3.06%. The potassium test had an averaged of 20.15%, 20.17%, 20.19%, 20.36%. The glucose test had an averaged of 34.84%, 46.17%, 56.41%, 57.23%. The sucrose test had an averaged of 13.20%, 17.10%, 27.37%, 30.23%, and an averaged fructose of 38.30%, 52.27%, 59.55%, 62.15%. The conclusion of the study was kurmajasu juice with ajwa dates has a highest nutrients in carbohydrates, protein, potassium, but glucose, sucrose, and fructose are lowed.
